On BBC Two, 8:00pm Tuesday 3rd November 2009, on James May's Toy Stories, where James May was making a garden intirely out of plasticine for Chelsea Flower show, visited one of the model makers from Aardman, who showed James various methods for model making, and some of the skeletons from inside the models, great program! You can either watch a repeat on television (not sure when sorry!) or visit this link to watch online http://www.bbc.co.uk/iplayer/episode/b00nt825/James_Mays_Toy_Stories_Plasticine/

Sorry for bringing up this old thread but for people who did miss the episode, I just discovered that the entire series has just been released on DVD.

Wallace and Gromit also get a mention in James May's book of the series.
